For All Mankind on Apple+ is very good. I finished season 1 last night.
I feel its dry out there regarding a good series currently.
I'm casually watching The Gentlemen and Fallout, both are just ok.
I enjoyed Baby Reindeer, but ran through that in a weekend.
I liked Fallout, looking forward to season two.
I knocked out A Man in Full on Netflix in about three days. I really liked it.
Fallout is very good
Shogun is very good
Very late to the party, but watching Vikings currently. Love it.
I'm just waiting for the new seasons to drop. I liked Fallout, but nothing special.

I've watched the first three seasons of Vikings. Really dug it. Then it left Prime to go to Netfflix or wherever and, making issues worse, my "pirate shit" app has gotten very hit or miss (mainly miss) recently, so I'm on a bit of a hiatus while hoping those issues get worked out.
So I'm now watching Reacher. Gotta say, there is something really funny about random hicks deciding to challenge that dude, being what that he's a massive, massive dude who looks like he'd dismantle a person in about .15 seconds. And then does.

Severance is coming back....eventually. I recently read they finished filming.

I have these all queued up for 2024 release dates, last I checked:
Severance, House of the Dragon, Outer Banks (guilty pleasure), The Boys, The Diplomat, You, The Night Agent, Bosch: Legacy,
Then the wife loves Emily in Paris, and I get sucked in each season.
5 episodes into Fallout and I like it so far.
